Stuffed Green Peppers

I saw this recipe in a  newsletter from Hungry Girl and wanted to share it since it looked so yummy!  It is for "Bean there, Stuffed that" Peppers.  Here is her recipe.

 Bean There, Stuffed That" Peppers 

1/2 of recipe (2 pepper halves): 243 calories, 3.5g fat, 778mg sodium, 41.5g carbs, 11g fiber, 11g sugars, 13g protein -- PointsPlus® value 6*

Each serving of this recipe consists of a decadent and delicious duo of bean-stuffed pepper halves! Hope you're hungry...

Ingredients:
3 bell peppers
1 cup chopped onion
1 cup fat-free refried beans
1/4 cup red enchilada sauce
1/4 cup shredded reduced-fat Mexican-blend cheese
Optional topping: fat-free sour cream

Directions:
Preheat oven to 375 degrees. Spray a large baking pan with nonstick spray.

Slice 2 bell peppers in half lengthwise, and remove seeds and stems. Lay pepper halves in the baking pan, cut sides up.

Bake until slightly softened, 16 - 18 minutes. Remove pan, but leave oven on.

De-seed and chop remaining bell pepper. Bring a skillet sprayed with nonstick spray to medium-high heat. Cook chopped bell pepper and onion until softened, 6 - 8 minutes.

Transfer chopped veggies to a medium bowl, and blot away excess moisture. Add refried beans, and thoroughly stir.

Blot away excess moisture from pepper halves, and evenly distribute bean mixture among them.

Top each stuffed pepper half with 1 tbsp. enchilada sauce and 1 tbsp. cheese.

Bake until filling is hot and cheese has melted, 5 - 7 minutes. Eat up!

First Day of Kindergarten

My not so little girl started Kindergarten today.  She did a great job of waking up right away when it was time.  She ate her breakfast and was so excited that she was trying to rush me out of the house!  Here is a picture of her posing in her school uniform.  

Here is another one with her Monster High backpack that she loves!!! 













When we got to school I told her she would have a surprise and she was very surprised to see her Meme there waiting to take her into school!  She was very ecstatic!!  Here is a picture of her with her Meme.

We took her into her classroom and she did a great job of going right to her table and sitting down.  Her teacher gave her a worksheet to start working on and she started right away.  Here she is with her teacher, Mrs. Early, and she was a little shy at this point.

When I picked her she was excited to tell me all about her day.  She said she had a lot of fun and did not talk a bit, unless she was told too!  She said they got to explore the school and see where the other classrooms were and she was super excited that she might be able to help clean up the cafeteria!    She said she made lots of new friends and really likes her teachers.  She ate lunch at school and had pepperoni pizza, broccoli with cheese, apple sauce, and strawberry milk.  She said she loved the pizza and "killed it" and ate a piece of broccoli and some apple sauce. 

She had a really great first day of school and made sure to point out that they did not take naps at all!  Needless to say she conked out fast tonight from a big first day of school!  She is looking forward to more school.

Yum! Taco Bell Cantina Bowl

I tried the Taco Bell cantina bowl for the first time today. Since it first come out a few months ago I have been wanting to try it. The cantina bowl consists of your choice of chicken, steak, or veggie(I went with chicken). It is citrus herb marinated chicken with black beans, romaine lettuce, guacamole, roasted corn and pepper salsa,a creamy cilantro dressing, pico de gallo, and cilantro rice.

Everything in this cantina menu is stated as being freshly prepared. I wish I had thought to take a picture of it before I dived in but I was hungry and not thinking at that time! It was presented very well and looked very appetizing and it smelled so good.  There was a nice size scoop of guacamole on top, layered then by the chicken, salsa, black beans, and rice on bottom.  The creamy cilantro dressing was hard to see on it at first until I started mixing.  I have to say that I was especially surprised with how tasty this bowl was.  It did taste like fresh ingredients were used.  I especially like the rice and the dressing, just wish more of the dressing was drizzled on it.  This would be really good with tortilla chips also (which is offered as a side that you can upgrade to a meal). 

Overall, my first cantina experience was really good and I will most definitely eat it again.  Next time I will have to try the burrito version of it.
